Victoria Day Weekend Salad - Long weekends and bursts of color.


This is my newest favorite hot salad. I love salad rolls and peanut sauce but wanted to make something a bit easier at home. So I made this for a friend and well, let's just say...it is a huge hit!! If you don't want the pasta, I would add cooked chicken cut up in strips or big fat shrimp to it for extra protein and texture. But I ate all the veggies and left half of the pasta in my plate. The homemade peanut sauce is the BOMB! It was soooo soooo good. Honestly, it will only take about half and hour in total. Enjoy!


Salad Ingredients: • One package of gluten free pasta or rice pasta or whole wheat pasta, I used a linguini type-shape. •1 Tbsp. peanut oil •1 red bell pepper, cored and julienned (thinly sliced) •1 yellow bell pepper, cored and julienned (thinly sliced) •1 large carrot, peeled and julienned •1 cup red cabbage - shredded or cut as though it was going into coleslaw •1 cup frozen edamame •topping: thinly-sliced green onions (tops only), CILANTRO (about a handful then chopped), toasted sesame seeds and chopped peanuts Peanut Sauce Ingredients: •1/2 cup peanut butter, I used raw peanut butter from Nutters but I actually like the more peanuty taste that the Kraft smooth gave to this. Kraft has extra oils, filler and sugar added...it is up to you. Both were good, but the Kraft made one was better. •1/4 cup soy sauce •3 Tbsp. water •2 Tbsp. honey •2 Tbsp. rice vinegar, I added about an extra 1/2 tsp. •1 Tbsp. grated fresh ginger •2 tsp. toasted sesame oil •2 clove garlic, peeled and put through a garlic press •1 tsp. sriracha sauce, I liked it with an extra 1/2 tsp added. Cook pasta. Meanwhile, heat oil in a large saute pan over medium-high heat. Add bell peppers, carrots, cabbage, and edamame, and saute for 5 minutes, stirring occasionally. Once the pasta is cooked, drain it. Add the pasta and peanut sauce to the saute pan of veggies and toss to combine. Serve immediately, topped with green onion, sesame seeds and peanuts if desired.
